Authentic Paella Valenciana
The most famous Spanish dish, originating from Valencia, featuring a perfectly cooked layer of short-grain rice, chicken, rabbit, and saffron.
Ingredients
- 2 cups Bomba or Senia rice
- 500g chicken (cut into small pieces)
- 300g rabbit (cut into small pieces)
- 200g flat green beans (bajatocas)
- 100g large white lima beans (garrofón)
- 1 large tomato (grated)
- Generous pinch of saffron threads
- Olive oil, salt, water (or light chicken broth)
- 1 tsp sweet smoked paprika (pimentón dulce)

Heat olive oil in a wide paella pan. Brown the chicken and rabbit pieces thoroughly with a pinch of salt.

Add the green beans and lima beans, sautéing for a few minutes. Make a well in the center, add the grated tomato and paprika, and fry briefly.

Pour in the water (about 3 times the volume of the rice) and simmer for 20 minutes to create a rich broth.

Add the saffron. Sprinkle the rice evenly across the pan. Do not stir the rice after this point.

Cook on high heat for 10 minutes, then lower the heat and cook for another 8-10 minutes until the liquid is absorbed and a crispy crust (socarrat) forms on the bottom. Let it rest for 5 minutes before serving.
