Classic French Onion Soup (Soupe à l'Oignon)

A comforting traditional soup made with deeply caramelized onions, rich beef broth, and topped with toasted bread and melted Gruyère cheese.

Ingredients

  • 5 large yellow onions (thinly sliced)
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 6 cups beef broth
  • 1/2 cup dry white wine
  • 1 baguette (sliced)
  • 1.5 cups grated Gruyère cheese
  • Salt, black pepper, fresh thyme

Instructions

1
Melt butter and olive oil in a large pot over medium heat. Add the sliced onions and cook slowly until deeply browned and caramelized (about 40 minutes).
2
Deglaze the pot with the white wine, scraping up any browned bits.
3
Add the beef broth and thyme, bring to a simmer, and cook for 15-20 minutes. Season with salt and pepper.
4
Ladle the soup into oven-safe bowls, top with a slice of toasted baguette and a generous handful of Gruyère cheese.
5
Broil in the oven until the cheese is melted, bubbly, and golden brown.
