Traditional Karnıyarık (Stuffed Eggplant)
The crown jewel of dinners where fried eggplants meet a delicious minced meat filling.
Ingredients
- 4 medium eggplants
- 250g ground beef
- 1 onion
- 2 tomatoes
- 2 green peppers
- 1 clove of garlic
- 1 tbsp tomato paste
- Salt, black pepper, finely chopped parsley
Instructions

Peel the eggplants in stripes, soak in salted water, dry, lightly fry them whole, and slit them lengthwise in the middle.

Prepare the filling by sautéing the minced meat, onion, garlic, chopped peppers, and 1 chopped tomato. Stir in the parsley just before taking it off the heat.

Fill the eggplants with the prepared mixture, and garnish with tomato and pepper slices.

Dilute the tomato paste with hot water, pour it into the baking dish, and bake at 180°C (350°F) for 25 minutes.
