Baked Rice Pudding (Fırın Sütlaç)
Perfectly consistent traditional Turkish milk dessert with a beautifully browned top.
Ingredients
- 1/2 cup short-grain rice
- 1 liter whole milk
- 1 cup granulated sugar
- 2 tbsp wheat or corn starch
- 1 tsp vanilla extract
Instructions

Wash the rice and boil it with 2 cups of water until soft and the water is absorbed.

Add the milk and sugar to the pot, stir, and bring to a boil.

Dissolve the starch with a little water or milk, slowly whisk it into the boiling pot, add vanilla, and cook until thickened.

Divide the pudding into heat-resistant clay bowls, place them on a baking tray, add cold water to the tray up to half the height of the bowls, and bake on the top rack of the oven at 200°C (400°F) until the tops are dark and browned.
