Croquetas de Jamón (Ham Croquettes)

Creamy, melt-in-your-mouth fritters filled with a rich béchamel sauce and savory Serrano ham, coated in a crispy breadcrumb shell.

Ingredients

  • 150g Jamón Serrano (finely diced)
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 cup all-purpose flour
  • 2 cups whole milk (warm)
  • Pinch of nutmeg, salt, black pepper
  • Coating: 2 beaten eggs, 1 cup breadcrumbs, flour for dusting
  • Oil for deep frying

Instructions

Melt the butter and olive oil in a large pan over medium heat. Add the diced ham and sauté for 1 minute.

Stir in the flour and cook continuously for 2-3 minutes to remove the raw flour taste.

Gradually whisk in the warm milk. Continue to cook and stir constantly for 10-15 minutes until the béchamel is very thick and pulls away from the sides of the pan. Season with nutmeg, pepper, and salt (be careful, the ham is salty).

Spread the mixture into a shallow dish, cover with plastic wrap touching the surface, and refrigerate for at least 4 hours (or overnight) until completely firm.

Roll the cold mixture into small logs. Coat each log in flour, dip in beaten egg, and roll in breadcrumbs.

Deep fry in hot oil (180°C/350°F) until golden and crispy. Drain on paper towels and serve hot.
