Classic French Crêpes
Thin, delicate, and buttery French pancakes that can be customized with endless sweet or savory fillings.
Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup whole milk
- 1/2 cup water
- 2 tbsp unsalted butter (melted)
- 1 tsp vanilla extract (for sweet crêpes)
- Pinch of salt
- Butter for the pan
Instructions

In a blender or bowl, combine the flour, eggs, milk, water, melted butter, salt, and vanilla. Blend or whisk until completely smooth. Let the batter rest for 15-30 minutes if possible.

Heat a non-stick crêpe pan or skillet over medium-high heat and melt a tiny bit of butter.

Pour a small ladle (about 1/4 cup) of batter into the center of the pan and immediately swirl the pan to spread the batter into a thin, even circle.

Cook for about 1 minute until the edges lift slightly and the bottom is lightly browned. Flip and cook for 30 seconds on the other side.

Serve hot with your choice of fillings (e.g., Nutella, lemon and sugar, jam, or ham and cheese).
